Creativity, quality, and connection, are at the core of Prairie Bears Cider Co. It plays a part in how we live, how we work, and the product we make.

Kelli Burdek & Brett Mack decided to do a thing.

Starting a cider company may not seem like a linear career path for Kelli, a doctor and Brett, a heavy duty mechanic. But Prairie Bears Cider Co. is no side gig. Making cider out of rescued fruit started as a creative outlet for us during Kellis residency in 2017 but it quickly became something we turned into a way of life. Now were tending to our growing prairie orchard near Alberta Beach and crafting ciders that reflect both our commitment to quality and our love for the community we live in.

Located in Lac Ste Anne County, we combine the best of both worlds in rural living and urban access. Less than an hour from Edmonton and just off the Yellowhead Highway. We look forward to inviting visitors to our orchard and taproom in the near future. For now, you can find us at Bountiful Farmers' Market in Edmonton.

Why we’re growing our own prairie hardy orchard…

We’ve chosen our varieties based on the blends that give the cider the best possible flavour. A key factor is crab apples. Their acidity makes for an excellent blended cider. They are also incredibly labour intensive. But we think it’s worth it.

  • Thanksgiving weekend might just be the perfect time to perfect your Roasted Pear Ginger Cider Dark + Stormy. 

Ingredients:
- 3/4 oz lime juice (freshly squeezed)
- 2 oz dark rum
- Prairie Bears Ginger Pear Cider
- 1/2 oz Roasted Pear Ginger Simple Syrup (see below)

Directions:
Add ice, lime juice, dark rum, and simple syrup into cocktail shaker. 
Strain into highball glasses. 
Top with 3 oz Prairie Bears Cider Co. Pear Ginger
Garnish with lime & candied ginger.
Enjoy!

Roasted Pear Ginger Simple Syrup:

Cut 4 pears into wedges, place on parchment lined baking sheet along with 2-3” piece of ginger.
Place in 375° oven. Dry roast for approximately 35 minutes or until caramelized.

To make syrup, combine in a pot:
- 3/4 cup water
- 1/2 cup brown sugar
- Roasted pears and ginger

Simmer until sugar dissolves + 3-5 minutes to reduce by 25-30%. Remove from heat. Allow pear and ginger to steep for at least 15-20 minutes. Strain solids & reserve syrup for yummy cider cocktails!

Lemonade: 
1c simple syrup
1c freshly squeezed lemon juice (4-5 lemons)
2-3c water (to taste)
Blueberries and lemon slices for garnish

Iceberg:
Pour 1 bottle of Prairie Bears Blueberry Bergamot Cider into a shallow container and freeze. Rake with a fork every 1-2hrs to make ice crystals. 

Assemble by pouring lemonade into your favourite cocktail glass and top with a generous helping of cider iceberg.
